Recipe: Broccoli in almond sauce

Broccoli in almond sauce

Aromatic. Spiced. Tasty.

Ingredients for two people
  • Medium-sized broccoli
  • 2 tbsp vegetable oil
  • ¼ tsp mustard seeds
  • ¼ tsp cumin seeds
  • 2 pinches of asafoetida
  • 1 tsp turmeric (ground)
  • 2 pinches of black pepper
  • 1 tsp coriander seeds (ground)
  • ¼ tsp rock salt
  • A handful of almonds
  • 200ml water
  • Some fresh lemon juice
  • Some fresh coriander
Preparation
  1. Wash the broccoli and cut into florets of about one to two centimetres.
  2. Blend the almonds until they turn into flour.
  3. Heat vegetable oil together with mustard seeds and cumin seeds in a medium pot until the mustard seeds start to pop.
  4. Add broccoli, water, asafoetida, turmeric, pepper, ground coriander, and rock salt to the pot and leave to simmer over a low-medium heat for about 10 minutes until the broccoli is al dente. Add some water if necessary.
  5. Gently stir in the almond flour until the desired consistency is reached.
  6. Season with lemon juice and garnish with fresh coriander.
